Cheeky Monkey Breakfast Muffins

This weekend I am on a little “short holiday” to treat myself after handing in my Bachelor thesis. Alot of hard work, frustration, but also alot of passion was involved in this piece of work and it is an amazing feeling to have handed it in. Because it is snowing heavily (in England, yes!) at the moment, I thought about christmas markets and my favourite thing to eat there: Crepes with Nutella and Banana. Thats why I decided to make up a recipe for Banana and Chocolate Muffins for weekend breakfast!

For about 16 muffins:
115g butter
200g caster sugar
1 egg
250g plain flour
3 teaspoons baking powder
2 tablespoons good quality cocoa powder
150ml milk
100g milk chocolate chips
4 normal sizes very brown bananas
50g chopped hazelnuts
 

Preheat the oven to 180°C.

Cream butter and sugar, add the egg and whisk well. Measure out all the dry ingredients (flour, baking powder, cocoa) and sift into the bowl with creamed butter and sugar. Add the milk and whisk in.

Add chocolate chips, mushed banana and chopped hazelnuts and combine to a sticky batter.

Place muffin cases into a muffin tray and fill each one up to 3/4 with the batter.

Bake for 20-30 minutes (insert skewer for testing).

Serve warm or cold! Yum yum yum!
