The comfort of eating homebaked goods in a stressful time is so good. The next exam is coming up on Friday so I will be busy for the next couple of days and I made some lovely Scones for Breakfast to keep my going. I decided to make up a new recipe because the last time I made scones is not long ago…
Sift the flour, baking powder and cinnamon into a large mixing bowl. Rub in the butter to the consistency of breadcrumbs. Add the sugar.
Mash the banana with a fork and put into the measuring cylinder, fill up with milk to 150ml. Add to the dough.
Carefully incorporate into the dough with working it as little as possible.
Cover and leave to rest in the fridge for about half an hour.
Flatten out the dough on the work surface and cut out the scones with a greased small glass or fluted cookie cutter.
Place on a lined baking sheet and brush with some milk. Bake for about 20 minutes until golden brown.
