Breakfast Pancakes

I love watching Food Network and I thought the idea of making my own instant pancake mix (shown on Nigella Express) was  fabulous! I adapted the recipe a little bit to make it suitable for a 1-2 portion size. Keep the dry ingredient mixture in an airtight container (e.g. Kilner jar) and mix up with the three wet ingredients just before use 🙂 Foto For a jar of instant pancake mix:

600g plain flour
3 teaspoons baking powder
2 teaspoons bicarbonate soda
1 teaspoon salt
50g sugar 
 

Sift all the ingredients into a mixing bowl and mix thoroughly. Keep in an airtight container. F1oto For about 10 small pancakes (1-2 portions):

1/2 cup  (65g) of instant pancake mixture
1 egg
some milk 
vanilla extract
(cinnamon, cocoa powder)
some butter

Measure out  the instant pancake mixture and place into a medium bowl. Break one egg into a measuring cyclinder, stir with a fork and fill up with milk to about 100ml. Add to the dry ingredients. For flavour add some vanilla extract (a few drops), you could also add some cinnamon or cocoa powder. Mix up the batter. Melt about 2 teaspoons of butter in a pan and add it to the batter. Use a griddle or a smooth pan for baking the pancakes (1 tablespoon of batter for each pancakes). Brown from both sides and serve with fresh fruit or fruit conserve. I served it with some blackcurrant conserve briefly heated in a pan.
