I found this lovely recipe on one of my favourite websites called food52. It looks like a cake, but isn’t as sweet as a chocolate cake. Absolutely amazing for breakfast!
For 2 small loaves: 375g plain flour 115g wholemeal flour 2 1/2 teaspoons baking powder 1/2 teaspoon salt 4 tablespoons good cacao powder 1/2 teaspoon cinnamon 60g melted butter 225g caster sugar 1 tablespoon instant espresso powder 1 egg 340ml milk ( I used 240ml skimmed milk and 100ml soy milk)
Preheat the oven for 180°C (Gas Mark 4-5).
Sift flours, baking powder, cacao powder, salt and cinnamon into a mixing bowl.
In a different bowl whisk together sugar, melted butter and the espresso powder.
Add the egg to the wet ingredients and whisk again.
Slowly fold in the dry ingredients.
Grease and flour one large or two small baking pans. Fill with dough and bake for about 40-50 minutes.
Leave to cool down.
Serve sliced with some butter.
