This is quite a healthy version of pancakes and great for both breakfast and lunch.
For the apple compote, peel and grate the apples. Put in a saucepan with lemon juice and cinnamon and simmer for about 5-10 minutes.
For the batter mix eggs with flour, oats, water and milk. Leave to soak for about 5 minutes.
Grease a pan with some butter (only a tiny bit) and bake three pancakes on both sides.
Serve the pancakes with quark* and the apple compote!
* I found quark in English supermarkets!
