The easiest soup in the world, but it has alot of flavour. I made it as a quick lunch today and enjoyed it with some buttered sourdough bread 🙂 yum!For 1 portion 150g Broccoli 300ml vegetable stock 100g Blue Stilton or any other hard blue cheese (I used Shropshire Blue) 1 tablespoon Crème fraiche
Cook the broccoli in the vegetable stock until soft. Add the blue cheese and blend everything.
Add some crème fraiche and serve with some freshly ground black pepper.
