Plum Cake

It is late summer and finally time for plums. I love homemade plum cake and made one last week. The recipe is super easy and great for having guests over as it is easy to make in large quantities.

For the dough:

500g strong white bred flour
1 packet  of fast acting dried yeast
3 tablespoons of vegetable oil
250 of tepid milk
150g sugar
2 egg
A few drops of vanilla extract / 1 packet of vanilla sugar
a pinch of salt
For the topping:
750g plums
sugar, cinnamon

Sift the flour into a bowl and stir in the yeast. Form a hollow and fill with the oil. Place the pinch of salt into the oil and add the rest of the ingredients. Mix with an electric whisk.

Knead the dough and work it for a few minutes. Leave to rise in a bowl with a lid or a bowl with a damp cloth on top until it ha s doubles in size (time depends on yeast and temperature).

Preheat the oven for 180°C.

Roll out the dough on a baking tray lined with baking paper.

Pit the plums and cut them open. Place on the cake.

Bake in the oven until golden brown (30-45 minutes).

Serve with a mixture of sugar and cinnamon.
