Pasta

 

Last night my friend stayed over for a girls night and we cooked some lovely dinner. I love to cook with my friends, especially when they are inspiring and love food as much as I do. My friend definitely does. We decided to cook a simple pasta meal and apple crumble for dessert because my friend has never tried it before.

The pasta dish was completely improvised and absolutely delicious according to our taste and an impartial opinion of my sister.

For about 4 portions:

500g spaghetti nr.5 
150-200ml dry white wine
10 cherry tomatoes
2 small onions
2 large cloves of garlic
some apple vinegar
75ml tomato passata
juice of 1 lemon
some white balsamic vinegar
crème fraiche
rocket
buffalo mozzarella

(The amounts are a rough estimates, I didn’t measure them accurately!)

Bring water to a boil in a large pot, add some salt and cook the spaghetti as instructed on the packet (al dente!).

Chop the onions and press the garlic, heat some olive oil in a pan and cook both until soft and starting to brown.

Cut the cherry tomatoes in half and add to the pan. Add the white wine and let it reduce to about half of the liquid.

Add the tomato passata and the vinegar to taste. Season with salt, pepper, lemon juice and crème fraiche.

Drain the spaghetti and put into the sauce in the pan, mix and place on the plate.

Wash the rocket and place on top, finish off with some buffalo mozzarella and some pepper!
