My very favourite strawberry jam!
Wash the strawberries and remove the green parts. Cut into cubes.
Wash the limes under very hot water. Grate the zest off both limes and add to the strawberries. Squeeze the limes and add their juice to the fruit as well.
Add the jam sugar and leave in the fridge over night. (It works using it straight away but it tastes nicer when you leave it overnight)
Pour into a pot and bring the mixture to a boil. Boil for four minutes and puree with a hand blender.
Pour the hot jam into clean glasses and close the screw lids. Turn over and leave to cool upside down.
Your can keep unopened glasses of jam for month on the shelf, refrigerate once opened.
