Tomato Sauce

This is the easiest tomato sauce in the world, but it has some great flavours that can be used in a variety of ways. Today I used it as a quick pasta sauce and will use it for a Ratatouille bake tomorrow.

 
1 onion
1 clove of garlic
some fresh rosemary
1/2 fresh, small red chilli
2 tomatoes
tomato passata
some light cream, ketchup, salt and pepper
 

Chop up the onion, red chilli, and rosemary. Crush the garlic and add everything into a pan with some hot olive oil. Leave to brown for a minute or so and add the tomatoes. Add the tomato passata and leave to simmer for 5-10 minutes on low heat. Season to taste with some light cream, ketchup and spices.

Serve with some pasta and fresh buffalo mozzarella 🙂
