Simple Madeira Cake with Chocolate

My mum bought this amazingly shaped cake mould and I couldn’t resist to use it straight away. Because I am very busy with revision I chose a really easy and quick recipe with ingredients we had in the house:

For the dough:
250g butter or margarine
225g caster sugar
1 teaspoon vanilla sugar
a pinch of salt
2 drops of lemon flavouring
4 eggs
250g plain flour
1 teaspoon baking powder
100g chocolate flakes
 
For the covering:
150g chocolate (milk or dark)
1 tablespoon vegetable oil
or:
chocolate cake covering
 

Preheat the oven for 180°C, grease and flour the cake mould.

Whisk the soft butter/margarine and slowly add sugar, vanilla sugar, salt and lemon flavouring.

Whisk in each egg separately for about half a minute before adding the next one. Mix flour and baking powder in a bowl and add in two steps under constant whisking of the dough. Add the chocolate flakes.

Fill the dough into the cake mould and bake for 30-50 minutes depending on the form of the mould. The cake is ready when no dough sticks to a metal stick after testing the m

iddle of the cake.

Let the cake cool down for a couple of minutes before turning out the cake on a baking grid. Let it cool down completely before covering it with chocolate.

Melt the chocolate and brush on the cake.

Now enjoy a slice of this beautifully shaped and coloured cake 🙂
