Lemon and Yoghurt Cake

This cake has a lovely smooth and juicy texture. The combination of lemon and yoghurt gives it a very fruity and fresh taste, I LOVE THIS CAKE!

 
180ml vegetable oil
2 eggs
2 tablespoons lemon juice
1 teaspoon lemon zest
280g thick natural yoghurt
380g caster sugar
300g plain flour
1 teaspoon baking powder
 
for the icing:
180g granulated sugar
some icing sugar
60g lemon juice
 

Preheat the oven for 170°C.

Whisk the ingredients together to form a sticky dough. Fill into a silicone mould and bake for 35-50 minutes. Test whether the dough sticks to a knife/metal stick. If it doesn’t, the cake is ready.

Mix the granulated sugar and lemon juice, add icing sugar if necessary. Pour over the cooled down cake and wait until it sets.
