Breaded Chicken with Mashed Potato

For two portions:
1 large potato
1 chicken breast 
1 egg
2 slices of toast
2 tablespoons oat flakes
plain flour
some milk and butter
 

Peel the potato and cut into large chunks. Cook the potato cubes in boiling salt water until very soft. Add some milk and a knob of butter and mash until it is smooth.

Put the toast in the toaster and take it out just before it starts to burn. Place on a baking tray in the oven and bake until it is very hard and crunchy. Chop and use a blender to get fine breadcrumbs.

Whisk the egg with a fork so that yolk and egg white merge. Fill breadcrumbs, oat flakes and flour into a bowl.

Cut the chicken into 2-4 cm pieces and place in the egg mixture. Cover completely in egg and roll in the breadcrumb mixture afterwards. Cook in a pan until the chicken in cooked.

Serve with some fresh vegetables.
