These cookies are so easy to make and they are great for all sorts of occasions. As you can see on the picture, I made them just before Christmas. You can get cutters in all shapes and sizes so there is no limit to your creativity. Easter is coming up so why not make some bunny cookies 😉
Mix all the ingredients together and knead the dough for a while. Form a big dough ball and cover it in aluminum foil. Leave it to rest in the fridge for a couple of hours (freezer works fine if you don’t have the time to wait). The dough needs to be cold and hard in order to proceed to the next step.
Preheat the oven for 160°C.
Flour a work surface and take a piece of the dough. Roll the dough out with a rolling pin to a thickness of about 0.5-1cm. Use different cutters or a knife to cut out cookies and place them on a baking tray covered with baking paper.
Bake the cookies for about 10-20 minutes and decorate them when they have cooled down.
For decorations, my favorite is a lemon icing. Simply mix icing sugar with lemon juice to get a thick icing and brush it on the cookies. Other options are chocolate or sugar sprinkles, chocolate covering, coconut flakes, nuts and pretty much everything else you can find in the home baking aisle of your supermarket.
