Honey Chicken and Haloumi with Spinach


1 chicken breast
50-100g haloumi cheese
1 tablespoon olive oil
1 tablespoon honey
1 lemon
1/2 onion
1-2 cloves of garlic
A big handful of fresh spinach

Preheat the oven for 180 C. Wash and dry the chicken, cut off all the fat. Place in a baking tray with sliced Haloumi cheese. Mix the olive oil with honey and some black pepper and brush it on the chicken and the cheese. Add some lemon zest on top of both. Cook in the oven for 15-20 minutes.
In the meantime cut the onion and garlic in very small pieces and heat some olive oil in a pan. Cook onion and garlic and add the spinach when they start to brown. Toss the spinach around until it shrinks. Serve with a slice of fresh lemon.
