Cheesy Jacket Potato with Pork Medaillons

1 big baking potato
3 teaspoons soft goats cheese
Some grated medium cheddar
200g Pork fillet

 

Wash the potato and preheat the oven for 220°C.
Prick the skin of the potato and rub some salt in to create that lovely crispy skin.
Put the potato in the oven and let it bake for 50 minutes or until it is cooked (depends on size of potato).
Cut the potato open and take some of the inner part out with a spoon. Mix with goats cheese and mash it a little. Put the filling back inside and add some grated cheese. Put it back into the oven until the cheese is melted.
In the meantime cut the pork fillet into 2 chunky pieces and cook in a pan with olive oil. When it’s nice and brown on the outside check whether the inner part is cooked, if not: stick it into the oven at 100°C until its done.
